 One of the healthiest and most delicious salads I make!

I have been in Norway a few times. My favorite memory from my trips is visiting my friends mother farm. Around her house she planted every type of berry. Right next to a blackberry plant a hammock was waiting for me.
So I spent one of those long, long Scandinavian summer days lying in the hammock, plucking berries and popping in my mouth like popcorn.
My friends mother wasn't too happy with me when she saw how empty her blackberry bush looked. As far as I am concerned, you shouldn't hang a hammock right next to it, if you want your guest to be able to contain themselves. (and I am still very thankful Helga's mom!)

This salad is a delicious mix of those Nordic flavors with an Italian flair. It is super healthy. The farro has much more fiber than brown rice, the berries are a powerhouse antioxidant. The walnuts are great for your heart and the fennel has lots of potassium and magnesium. Enjoy!

Vergan, veggie, gluten free salad Farro salad with blackberry, fig, fennel and balsamico


For two you will need:

-Two cups of cooked farro
-A fennel bulb
-half an onion
-a handful of walnuts
-3 dried figs
-a cup of blackberry
-a handful of Roquette/rucola
-The best quality aceto balsamico you can find

Add a bit of olive oil to the pan and brown the onion and walnuts for a minute or two. Cut the fennel, and figs, set aside. Add the blackberry to the pan, with one, or two tbs of vinegar, depending on the quality ( the better, the less you will need.) Stir for one minute until everything is warm and coated. Then just add the ingredients to the farro. Add salt and pepper, and taste if it needs more oil or vinegar. Buon appettito!
